Hotate scallops are bivalve mollusks that make their habitat in the cold water floor; they are known to prefer solitude.  Scallops are a common favorite sushi topping. They have an extremely smooth, glossy flesh with a gentle and slightly sweet flavor.  To prepare unagi for sushi, it is may be grilled and basted with a sweet soy-based tare sauce, or grilled with salt and served with a squeeze of citrus.
