GGFT 100% Kombu is dried kelp seaweed — one of the most important ingredients in Japanese cooking and the primary source of natural umami. Kombu is rich in glutamic acid, which means simmering it in water creates dashi stock, the flavour foundation of miso soup, ramen broth, udon soup and virtually every savoury Japanese dish.Soak one piece of kombu in cold water for 30 minutes, then gently heat to just below a simmer to extract maximum flavour. Also use kombu when cooking rice for subtle depth, or add to beans and legumes to improve digestibility.
