Mera Yuzu Kosho Red is a Japanese fermented paste made from ripe red yuzu peel, red chilli and salt — one of Japan's most prized and distinctive condiments, originating from the Kyushu region. It has a coarse, pesto-like texture with an exceptional flavour profile: intensely sour-citrusy from the yuzu, fiercely spicy from the chilli, and deeply savoury from the fermentation. A small amount makes a very large flavour impact.Use a pea-sized amount as a condiment with grilled chicken, beef tataki, sashimi and hot noodle dishes. It melts into warm broth beautifully and pairs extraordinarily well with grilled seafood. Also excellent stirred into dressings, dipping sauces and finishing glazes. Supplied frozen.
